7. Cover tightly with 2 or 3 layers of aluminum foil. It needs to be as air tight as possible to "steam" the ribs.
8. place in the oven in the middle rack for 3 hours.
9. Take the ribs out of the oven and let them sit for about 15 minutes. I know it's hard not to take a peak :)
10. Cover the ribs with some barbeque sauce and enjoy!!!

11. Cover the ribs with BBQ sauce and place on the grill for added flavor. Place it on the grill only to heat it a little (The time depends on the heat of the actual grill). In the picture it was the last thing I put on the grill (the fire was a little weaker) so I put it for about 5 minutes on each side.

- Barbeque sauce ( you can also use your favorite dry or wet rubs in this part, I use store bought sauce because it needs no time to make).
- Baking pan. Preferably one with a rack, if it doesn't have a rack that's fine. Look for a pan where the handles are not on the edge, so that it can be covered tightly with aluminum foil.
Steps:
1. Apply rub (I like to use store bought barbeque sauce) on the ribs a bout 24 hours in advance.
2. Cover with either aluminum foil or cling wrap and let sit in the refrigerator for about a day. If you don't have a day, go for about an hour to soak in some of the flavor.

3. Preheat oven to 300° F (or about 150° C) and get pan ready. I know it's not the prettiest pan, but it gets the job done!
4. Pour about 1inch (about 2.5cm) to 1.5inch (less than 4cm) of boiling water in pan. I haven't tried this yet but other people add some extra flavorings to the water such as cinnamon, apple pieces, a combination of the two or others.
